Greenhouse Cafe's Menu and reservations

The Manchester Regional Academy Culinary Art class offers various luncheons to the public twice per month at the Academy as part of the vocational education training program. Meals are prepared and served by students involved in the school-based enterprise, the Greenhouse Cafe, under the supervision of Chef Michael Villandry and Mrs. Donnas Nakos. Lunches begin at noon and the cost is $8.00 per person.
A typical menu may include an entrée choice of Stuffed Loin of Pork or Chicken Marsala served with a starch and vegetable, salad or soup and dessert.
Students work under the supervision of a professional Culinary Arts instructor to learn various aspects of food service. Rotation through various jobs available in restaurant management and operation is critical to learning. The curriculum includes instruction in food preparation, safe methods of work performance, values of orderliness and pre-planning, development of appreciation for accuracy and use of standards in production, care and use of equipment, and development of an appreciation of sanitation and hygiene as both personal and public trusts.
Students are assigned jobs as chef, wait staff, assistant chef, back manager, front-of-the-house manager (host or hostess), swing person, utility person, and garden/salad/dessert person.

Reservations must be made up to two weeks in advance and are on a first call, first serve basis. Call Mrs. Nakos at 647-3505 to make a reservation.
